Quinoa'n'cheese!!


OK, this might be the best thing I ever made, I was talking with my (fantastic) trainers at Anytime Fitness today about raw foods, then the comfort issue came up: what about mac'n'cheese?! So I thought about it, and ran over to the grocery store and made my own version at home. Holy crap, I am struggling to save some for Kevin!!
I sauteed some onions in olive oil until they started to brown, added the quinoa rice (about 2 cups, I measure Rachel Ray style!) let those brown up a bit, then added enough water for the rice to move around and simmer (hmm, 2 cups or so)...put a lid on & let that simmer on medium for about 5-7min, added whole cream (1/2 cup-ish), chedder cheese curds, Parmesan, feta cheese, red bell pepper, chopped cilantro, then let that simmer/melt for another 5 until cheese started to brown...hmmm, I think that was it? I am allergic to recipes so it's never the same twice, but so soothing and filling any way you want to interpret it!!

  1. This recipe is genius! Although this is obviously mac & cheese inspired, I love the idea of using quinoa like risotto too, like with parm, mushrooms, and butternut squash..
